As a child, I loved Rice Krispy Treats. So naturally, when I became a mama, I enjoyed whipping them up for my kiddos. The part every mom loves about a treat like this is its simplicity- you only need a few ingredients and a couple of minutes!

This all changed when I became a vegan- and I found out what’s really lurking in our sticky squares. Gelatin can be found in many kids products, like candy, jello, and marshmallows. It can also be found in shampoos, cosmetics, and even vitamins. What they don’t tell you when you are a kid is that those delicious marshmallow squares are actually made from animal by-products from the meat industry, produced by boiling the connective tissues, bones, and skins of animals (like cows and pigs). Yeah…gross.

I said goodbye to those little squares of white puffs a long time ago, and never looked back.

But wait, before you just get grossed out, there is good news for vegans…”White Chocolate Wonderful!”

When I first stumbled across Peanut Butter & Co.’s “White Chocolate Wonderful” at the supermarket, I was stoked- it was something new to try, plus it’s a product that is certified vegan, gluten free, and non-GMO! Tasting it in my kitchen with the finger method (you know, the BEST way to eat peanut butter) made me melt- it was so fluffy and sweet it had me walking on air…and it reminded me of that marshmallow-y goodness I used to know.

So I combined the powers of “WCW” and “Koala Chocolate Crisp” to create my version of a vegan rice crispy treat…and it was a huge hit with the kids (and myself)! You aren’t going to get the same kind of “sticky” that the marshmallow provides, but the peanut butter really holds it together. The white chocolate tastes gives it that fluffy feel you need, and paired with the rice crunch, it’s a match made in vegan heaven.

White Chocolate Wonderful Vegan Crispy Treats

 

Ingredients:

Directions:

  1. In a saucepan, heat the peanut butter and vegan butter on low until melted, stirring constantly with a spoon (you don’t want to burn it, so don’t walk away!). You can also use the double boiler method.
  2. Remove from heat, pour in the rice cereal, and stir until all the cereal is coated.
  3. Transfer and press treats firmly into a 9 x 12 greased baking dish.
  4. Cover and place in the refrigerator for at least 10 minutes (when they completely cool, they will harden together).
  5. Cut into squares. Serves 16.

  2. 2 Tbsp Earth Balance vegan butter
  3. 1 box Natures Path EnviroKidz Chocolate Koala Crisp
  4. coconut oil (grease your baking dish with this)
