I’ve always LOVED Strawberry Shortcake. It’s a staple for spring and summer get-togethers, plus it’s oh-so-sweet and satisfying. 

This year, we had the pleasure of picking our own strawberries, which was a treat in itself. I’ve always wanted to go pick our own, but the past couple of years we had no luck with it (last year I was pregnant, and the year before we traveled to a patch that unfortunately was OUT of strawberries!). So, needless to say, we were more than thrilled at the opportunity for berry picking!

Excited as we were, leave it to the weather to shake things up!

I’m hoping this was the only time we picked strawberries in the mud lol! The weather was icky and gloomy, but we had fun anyway. The girls filled up two bucket loads, and they did a great job picking out only the best. Meanwhile, little man hung tight in my ergo lol. It’s days like that where the carrier REALLY comes in handy!

So once we got home, we washed our prize and started snacking- and oh my gosh they were the BEST strawberries EVER!

We used our strawberries to make fresh homemade jam, muffins, and this beautifully delicious Strawberry Shortcake.

If you want something super yummy and awesome for a Mother’s Day lunch, here’s the perfect dessert to show her how special she is. Using the freshest berries of course will make this treat extra tasty, but if you don’t get a chance to pick your own this week, head on over to the farmers market and get some fresh local berries!

Speaking of Mother’s Day, I want to send warm wishes to all the mommies out there. Being a Mom is hard work, and it’s nice to be recognized for our efforts, even if it’s only one day a year lol. For me it’s not about the material. A warm meal and nice dessert, or a handmade card from my kids, is all it takes to make me happy. For my own mother, whipping up something special in the kitchen is the best way for me to say thank you.

We need to remember our mommies, and how much work they have put into raising us, even if we bump heads sometimes lol (It happens to all of us!).

So if you want to sweeten your mommy up this Sunday, make her something special, like this Strawberry Shortcake!

I absolutely love this dessert. It’s easy to make, gluten-free, and vegan! I added banana to make it moist and flavorful, a must for GF baking. (For another great banana inspired treat, check out this post for The BEST Banana Bread EVA!Top it with fresh strawberries and coconut cream* (recipe included) and you have yourself a beautiful Sunday dessert!

*The coconut cream is a substitute for whipped topping, but I’ve heard that you can buy yourself a kitchen appliance that magically transforms coconut milk into fluffy creamy goodness. I’m hoping to try that out soon, meanwhile, I’m good with this deliciously smooth coconut cream topping!

Strawberry Shortcake with Coconut Cream

Ingredients:

Strawberry Topping:

  • 2 C strawberries, washed, tops removed, and cut in half
  • 1/4 C organic sugar

Cake:

  • 1 C Gluten-Free All Purpose Flour (Bob’s Red Mill)
  • 1 C Oat Flour (Bob’s Red Mill)
  • 2 1/2 tsp baking powder (aluminum free)
  • 1/2 tsp salt
  • 1 1/2 C organic sugar
  • 1/2 C coconut oil
  • 3 tsp vanilla
  • 1 banana, mashed
  • 1 C almond milk

Coconut Topping:

  • 1/2 C thick coconut milk (Native Forest)
  • 1/2 C ice cubes
  • 1 tsp vanilla extract
  • 1 tsp organic sugar

Directions:

  1. Place the strawberries and sugar in a medium bowl, stir and set aside.
  2. For the cake, add all ingredients to a medium bowl and mix with electric beaters until smooth. Pour into a greased baking dish (I use a 10-inch oval) and bake at 350° for 1 hour, or until a tooth pick inserted comes out clean. Let cool for at least 10 minutes before serving.
  3. For the coconut cream, place all ingredients in a blender and beat until smooth and creamy. Top immediately on sliced cake with strawberry topping.

I made the shortcake and it was delicious! I brought it for snack at my son’s school to celebrate his birthday. The kids loved it! The school is on a farm and the strawberries were picked from their farm! Farm to table! Love it!
