I can’t imagine Christmas without cookies. I mean, besides being a requirement for pleasing the big guy in the red suit, they bring a closeness and warmth into the home that you don’t get with other food. My children and I love baking cookies together- especially with holiday themed music in the background lol- and I hope that this tradition continues, even when they are all grown up.

Baking cookies is not just part of our family tradition, but it is also something that we do every year with our close friends! This will be our 4th annual cookie exchange- where we bake and swap an assortment of holiday favorites.

At first it was just decorating pre-made cookies, and over time it has transformed into an afternoon of making, baking, and decorating with our kids. I look forward to it every year, and it has grown into our own holiday tradition that I hope lasts for years to come…

It’s no secret that my favorite cookie of all time is the classic chocolate chip cookie. It’s typically what I make every year with no complaints.

This year, however, I got…kinda lazy lol. I really wanted to make chocolate chip cookies, but wasn’t feeling up to doing the rounds- dropping cookies on sheets and waiting, removing, and starting again. So I decided to cut corners, and make cookie bars instead lol. The result was a twist on the classic cookie, packed with extra goodies for more crunch. I call them “Santa’s Helper Chocolate Chip Cookie Bars” because they are exactly that- they help bring in the Christmas spirit but don’t require the extra work of drop cookies!

I hope you enjoy these bars as much as I did! Of course, you can add any extra treats, nuts, candy, or whatever else you want to be a “helper.”

Santa’s Helper Chocolate Chip Cookie Bars

Ingredients:

  • 2 C unbleached, all-purpose flourchocobars6
  • 1 C oats
  • 1 C organic sugar
  • 3/4 C organic brown sugar
  • 3 Tbsp ground flax seed mixed with 6 Tbsp filtered water
  • 1 Tbsp chia seeds
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 tsp vanilla extract
  • 1 C vegan butter, softened (I use Earth Balance!)
  • 1 1/2 C vegan chocolate chips
  • 1/2 C pretzels, broken
  • 1/2 C pecans

Directions:

  1. Oil a 9×13 baking pan with coconut oil. Set aside.
  2. Add the butter and the sugars to a medium mixing bowl, and beat with electric mixers until combined well.
  3. Add the flax seed and the vanilla extract- mix again until combined well.
  4. Pour in flour, oats, chia seeds, baking soda, and salt. Mix again with electric beaters until combined well. If mixture seems too dry, just add a touch of water to soften it up.
  5. Stir in chocolate chips, pretzels, and pecans, and mix well.
  6. Pour into prepared pan and spread evenly.
  7.  Bake at 375° for 25-35 minutes, or until lightly browned. Cut into squares.
