With the holidays in full swing, I’ve been making cookies. Lots of cookies. Lots and LOTS of cookies lol! It’s half tradition, half sweet tooth that gets me in the kitchen for holiday baking. Yet, no matter how many different types of cookies I bake, I always go back to my favorite: The traditionally heavenly chocolate chip cookie. To me, it’s the perfect cookie. Its got the right amount of chocolate so that its not over-doing it, it’s sweet, but not rich, and if it’s baked juuuust right, it can be that perfect texture in your mouth (somewhere between crunchy and chewy). Yup, PERFECT.

So I’d like to share my favorite vegan chocolate chip cookie recipe.

It’s my own spin on this vegan cookie and its even more scrumdiddlyuptious! Perfect for your holiday guests, especially the big guy in the red suit *wink*. These cookies also go great with a nice mug of hot chocolate, snuggly kiddos, and a sweet holiday movie.

Vegan Chocolate Chip Cookies

Ingredients:

  • 3 Tbsp ground flax seed, soaked in 6 Tbsp water
  • 1 C Earth Balance vegan butter, softened
  • 3/4 C organic sugar
  • 3/4 C organic brown sugar
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 2 1/4 C unbleached all-purpose flour
  • 1-2 C semisweet vegan chocolate chips (try “Enjoy Life” brand)

Directions:

  1. Preheat oven to 375°
  2. In a medium bowl, combine flax, sugars, butter, and vanilla extract. Whip on high with electric beaters until creamy.
  3. Add the baking soda, salt, and flour. Mix again with beaters until well combined.
  4. Add chocolate chips, and mix thoroughly.
  5. Drop on greased cookie sheets. Bake for about 8-10 minutes, or until lightly browned. Makes about 1 dozen.
  6. My mouth is watering already, they are so yummy!!!!! Happy Holidays!!!
