Raw Chocolate & PB Pretzel Cups_2

I’m not really a hater of Valentine’s Day. If anything, I’m happy that things get a little “cheery” in the middle of February. It gets cold here in the south, and chocolate is a natural remedy for cabin fever lol.

This past weekend, the south was hit with a pretty little ice storm. I say little, because the snow was only a light blanket over the back porch and our cars in the driveway. To a child though, snow is snow, and 10 minutes of fun requires at least 15 minutes of layering. Lucky for me, Grandma was here to help with all of this, since the hubs and I were off to celebrate my birthday with unbreakable plans- a performance of the very controversial (and offensive lol) “Book of Mormon.”

And boy, was it COLD outside! I wondered when I was this painfully cold last, as we shivered our way through the city that day. It was so windy that I couldn’t even turn my head to look sideways, the air pressing its cold hands on my face and pushing me backwards. I really had to lean into walking. At one point I dropped my glasses on the concrete. They clinked hard on the ground and the lens popped out, which was immediately scooped up by the wind. *sigh* I really liked those glasses damnit.

Despite the weather bullying us all day, we managed to have a good time. I was so thankful though, when I was back at home and able to peel off the layers, diving under the covers in my warm bed. *Ahhhh* Nothing beats that.

Naturally, I’ve been indulging a bit in the sweet things, since my birthday was last week and Valentine’s day is fast approaching. Some of my favorite treats don’t involve much effort– such as these sinfully easy Raw Chocolate and Peanut Butter Pretzel Cups.

These treats are seriously SO EASY, that even a child could do it. The only skill needed is stirring. That’s it.

You can have these babies made and ready to eat in less time than it takes to layer on clothes for snow play. And honestly? I think I’ll just eat these and stare out my picture window.

The best part of course is that raw chocolate is good for you! There’s no need to feel guilty when indulging in a treat like these cups. Raw chocolate is high in magnesium and provides plenty of antioxidants, fiber, protein, and omega 6. By using raw, unrefined coconut oil, you will also be getting a good dose of your healthy fats. It’s a win-win!

To make these gluten-free, you can pick up a bag of these Glutino Gluten-Free Pretzels, breaking them up a bit (to fit in the mini cups) or leave them out all together. Feel free to experiment with this recipe and spin it anyway you’d like!

And of course, remember to pop these in your fridge on Valentine’s Day for your vegan sweetie:)

Raw Chocolate & Peanut Butter Pretzel Cups

Makes 14 mini cups

Ingredients:

Directions:

  1. Combine all ingredients (except pretzels) in a small bowl and stir with a spoon, until mixed well.
  2. Divide evenly into 14 mini baking cups.
  3. Top each cup with a mini pretzel, gently pressing onto the top.
  4. Pop in the freezer for 10-15 minutes, until hardened. Serve. (Keep leftovers in the refrigerator.)

  2. 3 Tbsp powdered peanut butter (such as PB2)
  3. 2 Tbsp powdered raw chocolate
  4. 1 tsp vanilla extract
  5. 2 Tbsp maple syrup
  6. Pinch of Himalayan pink salt
  7. Mini pretzels
  8. 14 mini baking cups
Instructions
