AUTUMN IN A GLASS.

If you want to feel the crispy cold and taste the flavors of pumpkin and apple spice dance on your taste buds, then get in the kitchen right now and make yourself a tall glass of goodness! Mm! This smoothie satisfies the heart’s longing for breezy fall days and hoodies, and the desire to sink your teeth into a huge slice of pumpkin pie.

If you can’t wait for October, like me, try this out- I promise, you will LOVE it.

When I got the idea and made my Pumpkin Spiced Smoothie, my kids gulped it down by the truck load. When I said I was going to make it again, they danced around the house like I just gave them each twenty bucks. LOL. Even little man was hooked, making his rounds around our glasses like he was beggin’ for change.

This is great for me to witness, because even though this feels like a treat, pumpkin packs a healthy punch. Rich in fiber, potassium, magnesium, Vitamins E and C,  and antioxidants,  it’s no wonder our mouths water at the sight of this super food. Pumpkin is also low in calories and fat, so it makes this smoothie something special you can indulge in, without the guilt.

For pregnant women, pumpkin is a great food to be consuming- all the nutrients are wonderful for your growing baby, plus the fiber can help with constipation, a common issue for women during pregnancy. If you are having a vegan pregnancy, eating pumpkin seeds on the side can give you that extra boost of protein you need for the day!

PSS2Pumpkin Spiced Smoothie:

Ingredients:

  • 7 oz pureed pumpkin (about 1/2 can)
  • 2 C almond milk
  • 1 C ice cubes
  • 1/2 tsp pumpkin pie spice
  • 2 Tbsp turbinado sugar (or maple syrup)
  • 1 Tbsp organic apple butter (no high fructose corn syrup, especially for pregnant women!)
  • 1 tsp vanilla extract

Directions:

In a blender, process all ingredients until smooth. May top with cinnamon if desired. Enjoy your Autumn in a glass!
