Most non-vegans can’t imagine breakfast without eggs- they are a staple in American culture and across the globe. Yet my perfect morning includes what my family likes to call “Teggs,” or vegan scrambled tofu and veggies.

Tofu is a great way to substitute eggs, as it is a complete protein and a great way to start the morning (I used to eat this all the time when I was pregnant!). I like to throw in whatever veggies we have on hand, choosing from a variety of onions, bell peppers, tomatoes, and even asparagus, zucchini, or pre-cooked chunks of potato.

This really is one of my favorite breakfasts, as the texture of the tofu really does feel like a scrambled egg in your mouth. Teamed up with the power of nutritional yeast, the tofu takes on a yellow color and has a hint of cheddar, which pairs nicely with the right combination of veggies. I like to sprinkle my Teggs with salt and black pepper, and then scoop them on a warm crusty piece of non-dairy buttered toast.

Ooooo yeah baby…

So next time you are hungry for some good “old fashioned” eating, try scrambled tofu as a healthy alternative. You will be doing yourself (and the planet) a huge favor:)

Simple “Teggs” with Veggies

Ingredients:

  • 1 package extra firm tofu, drained
  • 1/2 sweet onion, chopped
  • 1/2 green bell pepper, diced
  • 1 medium tomato, diced
  • 3 Tbsp nutritional yeast (or more if desired)
  • Sea salt and black pepper to taste

Directions:

  1. In a medium frying pan, saute onions and bell pepper (plus any extra veggies!) until soft.
  2. Add tomatoes, and cook another minute.
  3. Using your hands, crumble the tofu and add to pan.
  4. Cook for about a minute, then add the nutritional yeast. Some people like their eggs “runny,” so you only have to cook the tofu until it’s heated. For those who like “dry” eggs, cook until there is no more excess liquid.  If you want more of a cheddar taste, add some non-dairy cheddar cheese.
  5. Once cooked, sprinkle salt and pepper on top, and serve with a side of toast, pancakes, waffles, or vegan “sausage.”
