I heart Mexican food.

Especially in dip form.

The other day I spontaneously decided to create loaded veggie tacos for dinner, when it dawned on me that these tacos would go great with some “cheddar” Mexican dip. A quick look in my pantry boosted my confidence- I had cashews, nutritional yeast, and Mexican spices. I also had freshly picked tomatoes and a green bell pepper from my garden. Yup, this is totally happening.

It turned out better than expected- and the cheese dip is a great jumping off point for other culinary creations– I imagine this dip (minus the veg) would be perfect as a substitute for mac and cheese sauce, or even a tasty appetizer dip with freshly cut carrots, broccoli, and grape tomatoes.

There’s no way you can go wrong with “cheese” dip really. Oh and how was the dip on my tacos? “Delicioso!”

Mexican Fiesta “Cheese” Dip:

Ingredients:

  • 1 C cashews
  • 1/2 C water
  • 2 Tbsp nutritional yeast
  • 1/2 tsp turmeric
  • 1 tsp cumin
  • 1 small clove garlic
  • Salt and pepper to taste
  • Dash of chili powder
  • Freshly cut tomatoes, bell peppers, and olives (you could also add green onion and/or cilantro!)

Directions:

  1. Soak cashews in water for at least an hour.
  2. Add cashews (and water), nutritional yeast, turmeric, cumin, garlic, salt, and pepper to a food processor.
  3. Process until smooth, about 2-3 minutes.
  4. Transfer to a bowl, and top with fresh veggies. Sprinkle chili powder on top.
