Key lime pie granola bars

Kids love granola bars, but healthy ones can be pricey. When you move past buying mainstream granola (you know, the bars that have high fructose corn syrup in them, milk fat, and other unmentionables), granola snacks can start to attack your wallet. It’s a high price to pay for “good” snacks and convenience, which is why I decided to make granola on my own this week.

There are tons of recipes out there on the net: fruit bars, chocolate bars, protein bars, you name it. Most of these recipes are for baking though, which tacks on extra time. Personally, I enjoy no-bake recipes. You can get a snack or dessert in less than 15 minutes, which is the perfect recipe in mommy world.

That’s why I put together this key lime pie granola bar- it’s simple, it’s fast, and healthier than what you would find in a foil wrapper. I used to LOVE me some key lime pie, but have yet to create a vegan version of the real thing. So, this is my healthy alternative!

You can control the amount of sugar you want in it too, or omit it altogether. For this recipe, I used stevia as a sweetener, since it’s a healthy alternative to processed sugar.

As for presentation, you can cut ’em however you want, in whatever size you want. This recipe creates a 8×8 sheet of thick, chunky bars. For a thinner version, just cut the recipe in half. Don’t worry, it’s not complicated math lol!

Ingredients:

  1. Add all ingredients to a food processor, and process until smooth.
  2. Transfer and press into a 8×8 baking pan.
  3. Cover and refrigerate for about 5-10 minutes. The coconut oil will harden, helping it stick together when you cut it.

Ingredients
  1. 2 C dry oatmeal
  2. 2 C unsalted cashews
  3. 2/3 C coconut shavings (I used unsweetened)
  4. 1 C coconut oil (a must-have, without this they won't harden!)
  5. 1-2 limes juiced (add some lime zest for an extra lime kick!)
  6. 1 tsp vanilla extract
  7. 1/8 tsp salt
  8. 1-2 tsp stevia or other sweetener (this recipe has a touch of sweetness, add more if you want it to be a dessert bar!)
Instructions

Hey Sarah! I typically use raw cashews, but you can use whatever you enjoy most! As for the oatmeal, I didn’t toast mine, but I bet that would taste great and add a different flavor. Thanks for commenting, let me know how they turn out!
