Yummy Pumpkin Pie Granola Bars (Gluten Free & Vegan!)

Okay I admit it- I freak out a little when I go to the store and see displays of food with pumpkin in it.

When I say “freak out” I mean that I act like a little kid at a candy store.

“Look at this!!! Omg look, look!!!” I say, as I thrust a box into my daughters arms. She smiles wide and holds up another goody to gaze at. And my kids and I do little giddy dances as we throw boxes of pumpkin cereal and pumpkin jam and whatever-the-hell-else-they’ve-added-pumpkin-to in the cart.

The last time I was at the store, my daughter saw that they had vegan pumpkin marshmallows and I about lost my shit. No. Effin. Way.

GIMME!

And it went into my cart right next to the canned pumpkin.

Sometimes, I can go a little overboard around the holidays. There is no shame here.

I mean, how can you not love this!? Companies have definitely tapped into that fall feeling you get when you drink and eat anything that has cinnamon and pumpkin pie flavoring. They have found my weakness and they are taking advantage of me.

It’s like freaking crack okay? Gimme that pumpkin!!!

On a serious note, October is a special month for me- it’s the month I married my soul mate and I have fond memories of autumn, dating all the way back to my childhood.

During this time, I like to connect with my family as much as possible, by going to the pumpkin patch, baking, and just enjoying life’s little luxuries.

One of my little luxuries is making homemade granola bars, and I do it often. It’s cheaper than buying a box and they taste better too. You know what goes in it and you don’t have to worry about unwanted preservatives!

The best part? You can make your own granola bars in less than 10 minutes.

There’s not a lot of prep, zero cooking, and you feel accomplished afterwards because you made something “from scratch.” Now that’s my kind of recipe!

And so I give you the ultimate granola bar- with freaking PUMPKIN in it for goodness sakes!

Pumpkin Pie Granola Bars

Ingredients:

  • 1/4 C  unrefined coconut oil
  • 2 C gluten-free oatmeal
  • enjoy life1/2 C gluten-free rice flour (Try “One Degree” veganic)
  • 3 heaping tablespoons pumpkin puree
  • 3 tbsp coconut nectar, maple syrup, or honey
  • 2 tsp vanilla extract
  • 1/3 C chocolate chips (Use “Enjoy Life” allergy-free chips!)
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/8 tsp Himalayan sea salt

Directions:

  1. Line an 8 x 8 square baking dish with parchment paper. Set aside.
  2. Toss all ingredients into your stand mixer bowl.
  3. Using the paddle attachment, mix on low speed until combined well. (If you don’t have a stand mixer, just do this by hand!)
  4. Transfer mixture to baking dish, and using your hands, press firmly, spreading the mixture evenly across the dish.
  5. Pop in the freezer for 15-20 minutes, to allow bars to harden.
  6. To remove, hold parchment paper and lift bars out of pan.
  7. Cut into squares. Serve.
