~Meatless and Dairy Free~ Crock-Pot Bacon and Cheddar Potato Soup

I’ve really been diggin’ my crock-pot recently. There is just so much to do, TOO much to do, with a toddler, my homeschoolers, and the holidays. While I’ve mentally kept my head on straight, I’ve been fighting a mild cold that has affected my physical morale.

So I have to take shortcuts. And that’s okay with me.

The best decision I have made this month is dusting off the old crock-pot and giving her another go. It started when I made a big batch of apple butter after our annual mountain trip. The pot got comfortable on my counter and I didn’t have the heart to shoo her away. If anything, I was grateful to have a buddy help me with dinners lol.

And oh, the things we have made together!

Meatless Bacon and Cheddar Soup

I’ve actually learned a lot about crockin’ it this month. Like, did you know you could cook an entire lasagna in a crock pot? YEAH! Freaking amazing if you ask me.

Of course, one of my favorite things to do is make soup. There is nothing easier than throwing in a bunch of veggies in the morning, only to have a fantastic dinner waiting for you at the end of the day. Especially when you are feeling under the weather, this is a real treat.

I always loved bacon and cheddar soup, so I decided to take a nod to that classic dish with my meatless bacon. It really adds a lot to this soup, and tastes just as good (if not, better!) than the real thing. You can fry it up, super crunchy, and sprinkle it over your bowl like bacon bits. Yup, it’s awesome.

Smart Bacon- Use this to make this yummy vegan potato soup!

Top it with some green onions, and you have yourself a lovely winter soup that everyone will love.

*Crock-Pot* Vegan Bacon and Cheddar Potato Soup

Ingredients:

  • 1 large yellow onion, diced
  • 1 C celery, sliced (leaves can be left on- these add flavor!)
  • 8 red potatoes, sliced, diced, or chunked (whatever works for you!)
  • 1/4 C Nutritional Yeast Flakes
  • Generous amount of salt and pepper
  • 1/4 tsp powdered ginger (fresh ginger will give it a completely different taste)
  • 6 C Not-Chicken broth or vegetable broth
  • 2/3 C dairy-free cheese (such as Daiya cheddar shreds)
  • 1 package of Smart Bacon
  • Green onions, sliced thin, for garnish

Directions:

  1. Place onions, celery, potatoes, nutritional yeast flakes, salt, pepper, ginger, and broth in your crock-pot. Make sure your veggies are completely submerged under broth, especially if you are leaving the house for the day.
  2. Cook on high for 6-8 hours, until the potatoes are soft ( you can break up some of the potatoes by using a potato masher if you wish).
  3. Add Daiya cheddar cheese and stir.
  4. Fry up your Smart Bacon in a medium frying pan. Let cool for 5 minutes, to allow bacon to harden.
  5. Ladle soup into bowls, top with Smart Bacon and sliced green onions.
