This muffin is scary good.

Worlds collide as two of my favorite ingredients come together in one sweet little holiday muffin: chocolate chips and pumpkin!

It’s so good you could slap yo’ mama.

Ok, you don’t really want to slap your mama, but truuuuuust me, you will want to make more than one batch. I was having cravings this week for chocolate chip pumpkin muffins, as I had the opp to taste this type of treat over the weekend at a vegan bakery. While I was super stoked that I was at a vegan bakery, the muffin came up short for me- it tasted more like a vanilla muffin than pumpkin, which left me wanting more. More pumpkin, more spice, and definitely, DEFINITELY more chocolate chips!

So, I used that as inspiration, plus called for a little help from some of my personal cookbooks, to prepare the ultimate chocolate chip pumpkin muffin.

Not only was the muffin a success, but the process was wonderful too. My children and I blasted Halloween music and took turns pouring in the ingredients. It was beautiful bonding time, and I really enjoyed it. Creating holiday treats with your children, and getting into the rhythm with music is fun…and a healthy practice. It opens up the heart and creates a closeness with your kids, and that is always a good thing. It reminded me of how much I love my daughters and how proud I am that they are mine.

The little guy also had fun too, being mischievous in the kitchen. He snuck into the recyclables and pulled out my flour bag….well, you can guess what happened next.

Yup, flour all over the floor and shirt. Score one for baby, mommy zero.

Chocolate Chip Pumpkin Muffins:

Ingredients:

  • 3 Tbs ground flax seed mixed with 1/2 C filtered water
  • 3 C unbleached all-purpose flour
  • 2 C organic sugar
  • 1 1/3 C sunflower oil
  • 14 oz canned pumpkin
  • 2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder (aluminum free!)
  • 1/2 tsp salt
  • 1 C (or more!) vegan chocolate chips

Directions:

  1. Preheat oven to 350°. Soak flax seed in water, and set aside.
  2. Mix together the dry ingredients- the flour, sugar, spices, baking soda, baking powder, and salt in a large bowl.
  3. Pour in all of your wet ingredients- the oil, the pumpkin, and the soaked flax seed.
  4. Blend well with an electric mixer.
  5. Fold in chocolate chips and mix well.
  6. Pour into muffin cups and bake for about 20 minutes, or until a toothpick inserted comes out clean.

Makes 24 bad-ass muffins.
