This October marks 8 years with my darling hubby! It’s a victory and a blessing, because we’ve been together longer than that. We were married when our twins were two (they were our little flower girls!), and before that, we had already been together for almost five years.

Yeah, we’re ancient. That’s how we roll!

So when you’ve been with someone for half of your life, you like to celebrate the milestones. Long term relationships seem like a dying breed these days, so if you’re one of the lucky ones, it’s important to honor that. Not to say that our marriage has been a cake walk (no pun intended) but even through our struggles, we have been committed to making it work. This has helped us become stronger and wiser. It has also helped us learn how to communicate and how to work together as a team. Of course, to stay married, I think it takes more commitment than just saying “I do.” It also takes patience, understanding, some humor…and a little magic.

It also takes cupcakes.

For our anniversary, I decided to make a romantic dinner…for five. The kids have had the sniffles, passing it from one child to the next and making the whole household a sick zone, so getting a sitter was out for the night. Instead, I tossed together some stir fry and noodles, rolled some veggie sushi, busted out the chopsticks, and made the best of it. For dessert, I popped these sinfully delicious Black Magic Cinnamon Cupcakes in the oven and topped them with vegan whipped topping…mmmmm.

Hubby, not to be outdone, was a sweetheart and brought me some beautiful red roses. Our anniversary dinner was a success, and the cupcakes worked it’s magic on us as we enjoyed the night together.

Years ago, if you would have told my husband and I that we would have a set of twins and a spirited little boy, we would have laughed in your face! However, as we sat around our dining room table, talking and licking whipped cream off our cupcakes, I was thankful for it. This was meant to be, and I wouldn’t trade it for anything.

Here’s to 8 years of awesomeness.

Black Magic Cinnamon Cupcakes

Ingredients:

  • 1 3/4 C unbleached, all-purpose flour
  • 1/4 C cocoa
  • 1/2 C organic sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp sea salt
  • 1 C apple cider
  • 1/2 C sunflower oil (or melted coconut oil)
  • 1/2 Tbsp apple cider vinegar
  • Vegan whipped topping
  • Extra cinnamon, to sprinkle on top

Directions:

  1. Line a muffin pan with 12 cupcake tins, set aside.
  2. Preheat oven to 375º.
  3. In a medium mixing bowl, combine all ingredients (except the whipped topping and extra cinnamon).
  4. Beat on high with electric mixers until combined well.
  5. Divide evenly into cupcake tins.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the middle comes out clean.
  7. Wait until cooled before adding whipped topping and extra cinnamon.

Makes 12 cupcakes.
